It’s important to carefully choose cottage cheese. Poor-quality product can ruin the final dish, as it directly affects texture, taste, and result. Choose fresh, natural cottage cheese without additives or signs of spoilage (bad smell, uneven color, separated whey). Also pay attention to its consistency (dry, moist, smooth or grainy, soft or creamy) and fat content.
Preparation
Step 1
Use tasty, high-quality, natural cottage cheese without any milk fat substitutes. Soft cottage cheese from a package is best. The flavor of the casserole depends on the quality of your cottage cheese.
Step 2
Separate the eggs into yolks and whites. Do this carefully so that no yolk gets into the whites; otherwise, the whites won’t whip properly.
Step 3
Add the cottage cheese to the yolks. Pour in the sugar, both regular and vanilla, and add the flour.
Step 4
Blend everything together using an immersion blender. Don’t skip this step - a smooth batter makes the casserole more tender, especially if your cottage cheese is grainy. If you don’t have a blender, press the cottage cheese through a sieve.
Step 5
Add a pinch of salt to the egg whites - it helps them whip faster. Start beating the whites on low speed, then gradually increase the speed. Beat until stiff peaks form. To check if the whites are whipped properly, turn the bowl upside down - they shouldn’t fall out.
Step 6
Gradually fold the whipped egg whites into the cottage cheese mixture, gently stirring with a spatula. It’s important to do this delicately, because the whipped egg whites are what make the casserole airy.
Step 7
Grease the multicooker bowl with butter. Pour the batter into the bowl and smooth the top. Place the bowl into the multicooker and close the lid. Set the baking mode. On my model, it’s called “Baking,” but yours may differ. Set the time to 1 hour.
Step 8
After the timer beeps, open the lid and check doneness by gently pressing on the top of the casserole. A finished casserole will feel springy and not sticky. If not ready, bake for an additional 20–30 minutes, depending on the amount of cottage cheese. After the time is up, open the lid and leave the casserole inside until completely cooled. It will deflate slightly, but that’s normal.
Step 9
Remove the casserole from the bowl only when it’s completely cooled. Serve with sour cream, jam, or sweetened condensed milk. Enjoy your meal!
