Cottage Cheese Cake with Cottage Cheese Cream

Step 1
How to make cottage cheese cake with cottage cheese cream? It’s really not hard. Prepare the needed ingredients. Choose good-quality cottage cheese (without vegetable fat substitutes). Take the butter for the cream out of the fridge in advance. Preheat the oven to 180°C / 356°F.
Step 2
Combine soft cottage cheese with sugar and salt. Add baking soda and baking powder, mix, and leave for 20-30 minutes so they react.
Step 3
The mixture will become airy and fluffy and increase in volume.
Step 4
Add the eggs to the cottage cheese mixture and mix thoroughly.
Step 5
Add the flour in small portions. Be sure to sift the flour - this makes the cake lighter.
Step 6
Knead a soft dough that doesn’t stick to your hands. If needed, add a little more flour.
Step 7
Divide the dough into 8 parts. Roll each layer to a diameter slightly larger than 20 cm (about 8 in) and a thickness of about 3 mm (about 1/8 in).
Step 8
Bake each layer in the preheated oven at 180°C / 356°F for about 10 minutes. (I could fit two layers on one baking tray.) Adjust to your oven.
Step 9
Meanwhile, make the cottage cheese cream (without heavy cream). Cut the room-temperature butter into small cubes.
Step 10
Add cottage cheese, sugar, and sour cream.
Step 11
Blend everything into a light, fluffy cream.
Step 12
Add lemon zest. (I also added 2 tsp freshly squeezed lemon juice - the flavor became brighter.)
Step 13
Trim the cooled cake layers. Grind the trimmings into crumbs (in a blender or any convenient way). You’ll use these crumbs to decorate the cake.
Step 14
Assemble the cake. Place one layer on a serving plate and spread with cottage cheese cream. Add the second layer and spread with cream, and so on.
Step 15
Use the remaining cream to coat the top and sides, then sprinkle with the crumbs. Refrigerate for 3-4 hours to soak. The cottage cheese cake with cottage cheese cream is ready. Enjoy!
