Preparation
Step 1
How do you bake cottage cheese and oat flake cookies? Prepare all the ingredients. Use quick-cooking oats; I used oats with a cooking time of 3 minutes. Do not take the butter out of the refrigerator ahead of time, it should be cold. You can use any cottage cheese; I used 5% fat cottage cheese. Use a size C1 egg. Use all-purpose flour. I measured the ingredients with a 200 ml glass, about 6.8 fluid ounces. Turn the oven on to preheat to 180°C (350°F).
Step 2
Take a deep bowl and add the required amount of sugar, cinnamon, and oat flakes. Crack the egg into the bowl. Mix the ingredients with a fork until smooth.
Step 3
Rub the cottage cheese through a sieve and grate the cold butter on a coarse grater. Add the cottage cheese and butter to the bowl with the previously prepared ingredients and mix.
Step 4
Sift the flour together with the baking powder and add it to the dough. Mix until smooth. The dough will be thick but quite sticky. Do not add more flour, otherwise the cookies will not turn out soft.
Step 5
Line a baking sheet or baking dish with parchment paper. Using a teaspoon or an ice cream scoop, take a small amount of dough and, with wet hands, place it onto the baking sheet. Arrange the cookies at a distance from one another, because they will spread a little while baking. Bake the cookies for about 20 minutes in the preheated oven until golden. The exact time depends on your oven.
Step 6
Remove the finished cookies from the oven and cool them on a rack. If you increase the baking time a little, you can get crisp, golden cookies. From this amount of dough, I got 25 cookies. Serve the cooled cookies with a glass of milk, tea, or coffee. The cookies are soft and very aromatic. They can be stored for several days in a tightly closed bag. Enjoy!
