Step 1
Prepare the necessary ingredients for making a festive and delicious no-bake curd cheese cake.

To prepare the gelatin base, pour 300 ml / about 1 1/4 cups of 33% heavy cream into a cup, then add 40 g / about 1.4 oz of gelatin.

Mix the gelatin and cream well with a whisk, then set the cup aside until the gelatin swells.

To make the crust, crush 150 g / about 5.3 oz of shortbread cookies with a blender.

Place the prepared cookie crumbs into a deep bowl.

Add 100 g / about 7 tablespoons of melted butter to the bowl with the cookie crumbs.

Mix the cookie crumbs and butter thoroughly with a spatula until smooth.

Line a suitable mold with plastic wrap and cover the bottom with foil.

Place the prepared smooth cookie-and-butter mixture into the mold, spread it evenly, and press it down with your hand. Then put the mold in the refrigerator.

Place 500 g / about 1.1 lb of curd cheese into a suitable container in portions, and add 150 g / about 1 1/4 cups of powdered sugar in portions as well.

Add 200 ml / about 3/4 cup plus 1 tablespoon of 33% heavy cream to the curd cheese in portions, along with 1 teaspoon of vanilla sugar, and blend until smooth.

Transfer the prepared smooth, creamy curd mixture into a deep bowl.

Place the well-swollen gelatin into a saucepan and put it on the stove.

Heat the gelatin over medium heat until smooth, remembering to stir during the process.

Add the gelatin to the bowl with the curd mixture and stir with a spoon.

Mix all the ingredients in the bowl well with a mixer.

Add a drop of food coloring to each portion of the curd gelatin mixture.

Mix well, coloring each portion of the curd gelatin mixture a different color.

Spoon the prepared colored portions into the mold, alternating the different colors and trying to keep them from touching each other.

Tap the mold lightly, decorate the top of the cake to taste with berries or fruit if desired, and place it in the refrigerator for half an hour.
