Classic Pea Soup with Chicken

Preparation
Step 1
Use split peas - they don’t need long soaking (check the package). Any part of the chicken will do. Peel the potatoes and rinse them.
Step 2
Rinse the chicken under running water. Put it in a pot, add clean water, and bring to a boil. When it starts boiling, skim off the foam. Then add the rinsed peas and cook together with the chicken for about 40 minutes.
Step 3
Cut the peeled potatoes into chunks and add them to the soup. Continue cooking for 15-20 minutes.
Step 4
Peel and rinse the onion and carrot. Finely chop the onion and grate the carrot.
Step 5
Heat some vegetable oil in a skillet and sauté the chopped vegetables for 3-5 minutes over low heat.
Step 6
Add the sautéed vegetables to the soup. Season with salt and spices to taste. Add a pinch of ground black pepper if you like.
Step 7
Cook the soup for another couple of minutes, then remove it from heat. Pour into bowls and serve hot. Enjoy your meal!
