Easy
About 30 min.
Preparation
Step 1
You can use any parts of the chicken. I used chicken thighs and some fillet. Peel and rinse potatoes in advance. Soak pearl barley in cold water for about 20 minutes.
Step 2
Rinse the chicken and place it in a pot. Cover with cold water and bring to a boil. Cook 15-20 minutes. Remove meat from bones and return to the broth. Rinse pearl barley several times in cold water, then cover with clean water and cook separately from the chicken to keep the soup clear. Bring to a boil and cook 25-30 minutes, then drain.
Step 3
Peel and chop potatoes into small pieces. Cucumbers can be diced or grated on a coarse grater; I prefer grating. Add potatoes and cucumbers to the chicken broth and cook for 10 minutes.
Step 4
Meanwhile, peel onion and carrot. Chop onion finely, grate carrot. Sauté vegetables 3-5 minutes with vegetable oil.
Step 5
Add the sautéed vegetables to the soup.
Step 6
Add cooked pearl barley. For aroma, add a bay leaf. Season with salt and spices to taste. Cook together 15-20 minutes.
Step 7
At the end, add fresh herbs. I use dill, which complements the flavor well. Serve hot in bowls. Enjoy!
