Classic Beef Soup with Potatoes

Preparation
Step 1
For making the soup, I use beef meat (boneless). But you can also use meat on the bone. Peel the potatoes in advance and rinse them to remove any dirt.
Step 2
Pour water over the meat, place it on the stove, and bring it to a boil. As it heats up, foam will appear on the surface, which needs to be removed. Simmer the meat for 1 to 1.5 hours. Once the meat is cooked, remove it from the broth and cut it into pieces. You can strain the broth to make it clearer. Return the chopped meat to the broth. Bring it back to a boil.
Step 3
Cut the peeled potatoes into small pieces and add them to the pot with the meat. Let it cook for about 15 minutes.
Step 4
Meanwhile, peel the onion, rinse it in cold water, and chop it finely. Pour a little vegetable oil into a hot frying pan, add the chopped onion, and sauté it for 2–3 minutes, stirring occasionally.
Step 5
Add the sautéed onion to the pot of soup. Add a bay leaf for aroma. Season with salt and spices to taste. As a spice, you can add khmeli-suneli. Simmer for another 5 minutes.
Step 6
Chop some fresh parsley into the finished soup. Let it sit under a lid for a few minutes. Pour the soup into bowls and serve hot. Enjoy your meal!
