Chocolate Crepe Rolls with Cream
An amazing dessert with an incredible flavor! The tender curd filling perfectly complements the chocolate crepes. Jam in the filling adds a special note and a pleasant tang. It disappears from the table fast - loved by both adults and kids.

How to make chocolate crepe rolls with curd cream? First, cook the chocolate crepes. Prepare the ingredients listed.

Crack 2 eggs into a deep bowl. Whisk.
Step 3
Pour in 2 cups of room-temperature water, add sugar and salt, and mix again until dissolved.
Step 4
Add sifted flour and cocoa powder. Add the flour gradually, whisking right away. The original recipe listed 9 tbsp of flour - aim for a velvety, slightly stretchy batter (about like very heavy cream). The amount of flour depends on its properties, so go by consistency. Let the batter rest 5-10 minutes, then stir again.
Step 5
Heat a skillet with a thick nonstick bottom. To keep the first crepe from sticking, lightly grease the pan with vegetable oil using a silicone brush. Pour in a ladle of batter and spread it evenly over the bottom. Cook over medium heat for a few seconds to 1 minute.

Flip the crepe and cook until done; it will take a bit less time than the first side. Cook all the crepes this way. Let them cool slightly.

Meanwhile, make the filling.

In a deep container, combine soft curd (cottage cheese), 2 tbsp sweetened condensed milk, and vanilla sugar.

Beat with a mixer until smooth and creamy.

Lay 3 crepes in one row, overlapping each other.

Spread 1 tbsp of curd cream evenly over the crepe surface and add berry jam in a scattered pattern. I used black currant jam.

Gently smear the jam (it doesn’t have to be even).

Fold in the edges of the crepes on both sides, as in the photo.

Start rolling tightly from one end.

Form a roll.

Repeat with the remaining crepes and filling.

Decorate the finished rolls with fresh berries and dust with powdered sugar. Serve right away, or chill for a while. I serve it immediately.
