Children’s Cottage Cheese Muffins

Quick and very simple, tasty, great for tea or breakfast! Children’s cottage cheese muffins can easily replace cheesecakes or casseroles. They always turn out tender, soft, and aromatic. You can decorate them with glaze, cream, nuts, or powdered sugar. Treat your guests and family!

Preparation
Step 1
Use homemade, full-fat cottage cheese. Press it through a sieve, grind in a meat grinder, or blend until smooth. Be sure to sift the flour to enrich it with oxygen - this will determine how fluffy the muffins will be. Take butter out of the fridge in advance so it softens.
Step 2
Place the softened butter in a bowl, add sugar. Beat with a mixer for about 3 minutes until smooth and the sugar crystals dissolve completely.
Step 3
Add cottage cheese to the butter mixture. Crack in the eggs. Continue beating with the mixer until uniform.
Step 4
Mix part of the flour with baking powder, then add to the batter. Mix with a mixer or a silicone spatula. Gradually add the rest of the flour, stirring well each time. Note that flour varies in properties, so you may need more or less than stated. Focus on the desired consistency. The dough should be thick, similar to pancake batter.
Step 5
Since I baked muffins in silicone molds, I didn’t grease them. If using ceramic or metal molds, grease the bottom and sides with butter. Fill molds 2/3 full. Bake in a preheated oven at 180°C (356°F) for about 25-35 minutes. Baking time may vary depending on your oven.
Step 6
Check readiness with a wooden toothpick: pierce the browned muffins, and if the stick comes out dry without batter, they’re done. Remove from the oven, let them cool slightly, then transfer to a plate and dust with powdered sugar through a fine sieve. Serve with tea, coffee, or warm milk. Delicious!
