Step 1
How do you cook chicken soup with pasta? Prepare all the necessary ingredients. Peel the vegetables and rinse them under running water to remove any dirt. If you want a lighter version of the soup, use chicken breast. For a richer broth, chicken thighs or drumsticks work very well. The pasta can be replaced with vermicelli, rice, or lentils.

Cover the chicken with cold water, bring it to a boil, and cook for 30 minutes. As it boils, foam will form and should be skimmed off. Then remove the chicken and separate the meat from the bones. Strain the broth through a fine sieve. Return the meat to the strained broth and bring everything to a boil again. Cut the potatoes into small pieces and add them to the pot. Cook everything together for about 10 minutes.
Step 3
While the potatoes are cooking, prepare the sautéed vegetables. Finely chop the onion and grate the carrot on a coarse or medium grater.

Pour a little vegetable oil into a hot frying pan and add the chopped onion and carrot. Fry everything together for 3-4 minutes. Do not forget to stir from time to time so the vegetables do not burn. Burnt sautéed vegetables can spoil the flavor of the whole soup.
Step 5
Add the sautéed vegetables to the pot with the soup. Then add the pasta. Season the soup to taste with a little salt, spices, and ground black pepper. It is better not to add a bay leaf to chicken soup, because it overpowers the main aroma of the chicken. Stir and cook everything together for about 10 minutes. Then remove the pot from the heat and pour the finished soup into prepared bowls.
