Chicken Soup with Noodles and Egg

A hearty first-course meal for the whole family! Chicken soup with noodles and egg is tasty and filling, yet very simple to prepare - even a beginner can manage it. The noodles can be replaced with rice, lentils, grains, beans, or pasta. This soup can be cooked with any broth, with or without meat.

Preparation
Step 1
For the soup, you can use any chicken parts or simply cut a whole chicken into pieces. The noodles can be store-bought or homemade.
Step 2
Pour water over the chicken pieces, place on the stove, and bring to a boil. Cook for about 25-30 minutes. Then separate the meat from the bones and return it to the strained broth.
Step 3
Peel the potatoes, cut them into pieces, and add them to the pot with the chicken. Cook for about 15 minutes.
Step 4
Meanwhile, prepare a sauté with onion and carrot. Chop the vegetables and fry them for a couple of minutes with a little vegetable oil. Prepare the egg: you can either beat a raw egg and pour it into the boiling soup or boil the egg separately and add it later. We prefer pre-boiled eggs. Add the sautéed vegetables and egg to the soup. Season with salt and spices to taste.
Step 5
Next, add the noodles and cook for several minutes according to the package instructions. Remove the soup from the heat when the noodles are nearly ready. Add some chopped greens. Cover and let the soup sit for a while – the noodles will finish cooking without getting mushy. Serve hot in bowls. Enjoy!
