Chicken Soup with Cauliflower

The simplest and incredibly delicious family meal! Chicken Soup with Cauliflower will become a favorite in your menu after the first try. It stands out with its simplicity and rich flavor. You can swap some ingredients, and each time the taste will be different!

Preparation
Step 1
You can use any chicken parts for the soup - bone-in or boneless fillet. I’ll be using chicken thighs. Cauliflower and green peas can be frozen; no need to thaw beforehand.
Step 2
Place the chicken in a pot, cover with water, and bring to a boil. Skim off any foam that forms. Simmer on medium heat for about 20 minutes (cooking time depends on piece size and boiling intensity). Then remove meat from the bones and return it to the strained broth.
Step 3
Add diced potatoes to the boiling broth. Cook over medium heat for about 10 minutes.
Step 4
Separate cauliflower into small florets and add them to the pot. Cook for another 5-7 minutes.
Step 5
Meanwhile, peel onion and carrot. Dice the onion and grate the carrot on a coarse grater. Heat a skillet with a little vegetable oil and sauté onion and carrot for 3-4 minutes over low heat.
Step 6
Transfer the sautéed vegetables into the soup.
Step 7
Add green peas (fresh, frozen, or canned). If using canned peas, you may add a little of the marinade for extra flavor. Season with salt and spices to taste. Simmer everything for another 5 minutes until all ingredients are tender. Remove from heat and let the soup rest under a lid. Enjoy!
