Chicken Meatball Soup

Step 1
How do you cook soup with chicken meatballs? Prepare everything you need. Peel the vegetables, onion, potatoes, and carrot, and rinse away any dirt under running water. It is best to use parboiled long-grain rice. It does not overcook as easily. For the ground meat, I use chicken fillet, but you can make it from any part of the chicken or use ready-made ground chicken.

Add the rice to boiling water and cook it for 7-10 minutes over low heat until tender. The cooking time depends on the type of rice, so follow the instructions on the package. Drain the cooked rice in a colander and rinse it lightly with cold water. For the ground meat, pass the chicken fillet through a meat grinder.
Step 3
In a large bowl, combine the ground chicken and the cooked rice. Add the egg, a little salt, and spices. For seasoning, I use a couple of pinches of ground pepper and dried dill. Mix everything well until smooth and even.
Step 4
Pour water for the soup into a pot and bring it to a boil. Shape small meatballs with your hands and drop them into the boiling water. Why boiling water? In boiling water, the meatballs seal on all sides, firm up, and will not fall apart while cooking. Bring everything back to a boil. Foam will appear, and it should be removed with a skimmer or slotted spoon.
Step 5
Cut the peeled potatoes into small pieces and add them to the pot with the meatballs. Bring to a boil, reduce the heat a little, and let it cook.
Step 6
While everything is cooking, prepare the vegetable sauté. How do you make it? Finely chop the onion and grate the carrot on a fine grater. Pour a little vegetable oil into a hot skillet and add the chopped vegetables. Cook them over medium heat for 3-5 minutes, stirring from time to time.
Step 7
Add the sautéed vegetables to the soup and stir. Salt the soup a little to taste. You can add a bay leaf. Cook the soup for about 15 more minutes, then remove it from the heat. Cover the pot with a lid and let the soup rest for a while, about 15 minutes.

Serve the meatball soup hot. Enjoy your meal!
