Chicken Cutlets with Mushrooms
Tasty and simple - a perfect quick dinner! Chicken cutlets with mushrooms can be prepared in 30 minutes. It’s an ideal dish for chicken lovers and a favorite among kids. Serve them with grains, vegetables, pasta, or beans - they go well with almost anything!

Preparation
Step 1
You can prepare the chicken mince yourself by grinding chicken meat or buy it ready-made. You can use any mushrooms; here we’ll use champignons (white button mushrooms).

Peel, rinse, and finely chop the onion. Rinse and chop the mushrooms as well. Heat a frying pan, add a little vegetable oil, and sauté the onion and mushrooms together for 5-6 minutes, stirring occasionally to prevent burning.
Step 3
Transfer the chicken mince into a large bowl. Add one egg, salt, and some spices - ground black pepper and paprika work perfectly.
Step 4
Then add the sautéed mushrooms with onions and breadcrumbs. Breadcrumbs help absorb excess moisture from the mince, making the cutlets firm and preventing them from falling apart while frying.
Step 5
Mix all the ingredients thoroughly until smooth. Beat the mixture lightly against the sides of the bowl to make the mince denser.
Step 6
Heat a frying pan with a bit of vegetable oil. Wet your hands, form small patties, and place them into the pan. Fry each side for 3-4 minutes until golden brown.
Step 7
Don’t use high heat - this ensures the cutlets cook evenly inside.

Place the cooked cutlets into a small pot. While resting, they’ll steam slightly under the lid. Serve hot with your favorite side dish or fresh vegetables. Enjoy your meal!
