Preparation
Step 1
Prepare the following ingredients: chicken breast, hard cheese, egg, mayonnaise, starch (or flour), salt, turmeric (or your favorite spice), and oil for frying.

Remove the fillet from the chicken breast and cut it into small cubes. This is the most time-consuming step, but chopping the meat instead of grinding makes the cutlets incredibly juicy - a tip from an experienced chef!

Add the remaining ingredients to the diced chicken: egg, finely grated cheese, starch, mayonnaise, turmeric, and salt. Optionally, add finely chopped sweet bell pepper for extra flavor and juiciness.

Mix everything thoroughly and let the mixture rest for a few minutes so the ingredients absorb each other’s flavors.

Heat oil in a frying pan. Spoon the mixture into the pan to form cutlets and fry them on both sides until golden.

There are two ways to finish cooking: Option 1: Return the fried cutlets to the pan, add a little water, and cover to steam until done. This makes them fluffier. Option 2: Fry a bit longer on each side over medium heat until fully cooked - this gives a crispier texture.
