Chicken Brizol in a Skillet

Preparation
Step 1
You can make chicken mince yourself by grinding chicken fillet through a meat grinder, or buy ready-made mince.
Step 2
Place the chicken mince in a bowl, add a little salt and spices. Mix well and beat the mince against the bottom of the bowl so it becomes denser. If the mixture is too wet, add a bit of starch, semolina, or flour.
Step 3
In another bowl, mix eggs, milk, salt, and spices. Whisk lightly with a fork or whisk.
Step 4
Roll a small portion of chicken mince between two sheets of oiled plastic wrap.
Step 5
Pour a ladleful of the egg mixture into a plate.
Step 6
Place the rolled mince on top of the egg mixture.
Step 7
Add a little oil to a hot skillet and quickly slide the mince with the egg mixture into the pan. Fry for 1-2 minutes on one side until golden.
Step 8
Flip to the other side and cook over low heat for another 2-3 minutes until done.
Step 9
Transfer the cooked brizol to a plate and fold it in half while still hot. Repeat for the remaining portions.
Step 10
For the filling, grate pickled cucumbers and mix with mayonnaise and minced garlic.
Step 11
Spread the filling inside each brizol and serve hot.

You can vary the filling - try cheese, mushrooms, or vegetables. Enjoy!
