Chicken Breast with Beans

If you have too much liquid left at the end of cooking, increase the heat under the skillet and stir until the desired amount of tomato sauce evaporates. You can substitute chicken with turkey or any other meat of your choice. However, keep in mind that cooking time and calorie content will change accordingly.
Preparation
Step 1
Prepare all the necessary ingredients listed in the recipe. You can use canned white or red beans, or dry beans. Young green beans also work well. Instead of pureed tomatoes, you can use tomato paste, ketchup, or fresh seasonal tomatoes. If your chicken breast is frozen, thaw it at room temperature first.
Step 2
Rinse the chicken under running water, pat it dry, and cut it into evenly sized small pieces. Drain the liquid from the canned beans. Remove the core from the bell pepper. Peel the onion and garlic. Wash all the vegetables. If desired, peel the skin off the tomato.
Step 3
Cut the onion, bell pepper, and tomato into large cubes. Finely chop the garlic or press it through a garlic press.
Step 4
Heat vegetable oil in a deep, thick-bottomed skillet. Sauté the onion for a short time until it becomes translucent.

Add the chicken breast to the skillet.

Stir and cook over high heat until the chicken turns white.

Add the spices (I used a pinch of thyme, ground sweet paprika, and allspice), tomatoes, bell pepper, and garlic. Salt to taste. You can add any additional spices you prefer.

Mix everything well.

Pour in the tomato sauce (I used pureed sautéed tomatoes), stir, and bring to a boil. Then, reduce the heat to low, cover the skillet with a lid, and simmer until the chicken is fully cooked. This will take about 15-20 minutes.

Add the canned beans to the skillet. Increase the heat slightly. Stir everything together and let it cook for another 5-7 minutes.

Sprinkle finely chopped herbs over the dish and serve hot!
