Chicken and Potato Soup

Preparation
Step 1
For this soup, you can use any parts of the chicken. Cut the chicken into pieces. Peel and rinse the potatoes in advance.

Rinse the chicken and place it in a pot. Add water and bring to a boil over high heat. Then reduce to a low simmer and cook for 25-30 minutes. Add a little salt. When the chicken is cooked, remove it from the broth, cool slightly, and separate the meat from the bones. Strain the broth, return the meat to it, and bring it back to a boil.
Step 3
Cut the peeled potatoes into small pieces and add them to the boiling broth. Cook for 15-20 minutes until soft.
Step 4
While the potatoes cook, prepare the vegetable sauté. Peel and rinse the onion and carrot. Finely chop the onion and grate the carrot. In a skillet, heat a bit of vegetable oil over medium heat (about 325°F / 160°C) and fry the vegetables for a couple of minutes. Then add the chopped bell pepper - it can be cut into large or small pieces. Sauté for another 2-3 minutes and add the mixture to the soup pot.
Step 5
Season the soup with salt and spices to taste. Boil everything together for another 1-2 minutes, then remove from heat. The soup is ready! Serve with fresh herbs. Enjoy your meal!
