Use a deep bowl for the batter. Grate the cheese into the bowl and add chopped herbs. Any herbs will work; fresh dill is recommended.

Crack an egg into the bowl and add a little salt and spices to taste. Mix everything together.

Pour in the kefir and add sugar. Gradually add the sifted flour with baking soda while mixing. Don’t add all the flour at once - it may vary slightly depending on the cheese and kefir. Adjust for batter consistency.

The final batter should be fairly thick.
