For this dish you will need: white cabbage, preferably young, sunflower oil, carrot, onion, tomato paste, salt, pepper, dried herbs or fresh greens, and bay leaf in an amount corresponding to the number of pots.

So, shred the white cabbage into thin strips. It is better to use young cabbage, because it is more tender. I suggest first mixing all the vegetables separately in a bowl and only then dividing them among the pots. You can do it the other way around, placing the vegetables directly into the pots. But for a more even distribution of all the vegetables in each individual portion, we will mix them beforehand.

Rinse the carrot under running water, preferably with a brush, peel it with a vegetable peeler, and grate it on a coarse grater. It is better to use a sweet and juicy carrot, because this dish does not have many ingredients, and this vegetable will play one of the main roles in shaping the flavor of the finished dish.

Add the tomato paste and mix all the vegetables together thoroughly.

Grease the bottoms of the clay baking pots with a drop of sunflower oil. Distribute the cabbage mixture evenly among them. The bay leaf should be placed in the middle of each pot so that its flavor and aroma spread throughout the whole amount of cabbage. The pots can be filled tightly and all the way to the top, because the cabbage will lose a lot of volume during heat treatment. If you are worried that the cabbage may burn, you can add 2 tablespoons of water to each pot.

Cover the pots with lids and bake in an oven heated to 180°C (350°F) for 40 minutes. Put the pots into a cold oven first to avoid damaging the cookware, so they do not crack.

After this time, I stirred the cabbage and tasted a small piece. It seemed to me that it was still a little crisp, so I returned the cabbage to finish cooking for another 20 minutes at the same temperature. In general, the cooking time will differ for everyone because of the individual characteristics of ovens.
