Buckwheat with Chicken and Mushrooms in a Skillet

You can use any mushrooms or meat. It can be made meat-free, cream can be replaced with sour cream, tomato paste or different spices and herbs can be added. The flavor changes every time!
Preparation
Step 1
You can use any part of the chicken for this recipe. Either chop up a whole chicken or, like me, use chicken breast. I used champignons, but you can use any mushrooms.
Step 2
Use a deep skillet. Heat it until hot, then pour in some vegetable oil. Cut the chicken breast into small pieces and place them in the skillet. Fry for a few minutes until the meat changes color.
Step 3
While the chicken is cooking, prepare the mushrooms. Rinse champignons, pat them dry, and slice them.
Step 4
Add the mushrooms to the skillet with the chicken and fry together for 7-10 minutes. Liquid will release from the mushrooms and chicken and eventually evaporate. They will begin to brown.
Step 5
Peel the onion and carrot, rinse and chop them. Finely chop the onion. Grate the carrot or cut into slices or sticks.
Step 6
Add the onion and carrot to the skillet. Stir everything. Fry together for another 3-5 minutes until the vegetables give off a fragrant aroma.
Step 7
Rinse the buckwheat thoroughly. Drain it completely and add it to the skillet. Mix everything. Then pour in the cream. Add salt and spices to taste.
Step 8
Next, add water. The total amount of liquid (cream + water) to buckwheat should be in a 2:1 ratio. This way, the buckwheat will not overcook and will stay fluffy. Bring to a boil. Cover the skillet and simmer over low heat for about 15 minutes until the buckwheat absorbs all the liquid and softens.
Step 9
Buckwheat with chicken and mushrooms is ready! Serve hot on plates. Enjoy your meal!
