Buckwheat Soup with Chicken
So hearty and rich. It will gather the whole family at the table. Buckwheat soup with chicken is very easy to make, even a beginner can handle it. This is a tasty and nourishing everyday first course. For a lighter version, it can be cooked with chicken fillet.

Step 1
How do you make buckwheat soup with chicken? Prepare all the necessary ingredients. You can use any part of the chicken for the soup, I used chicken fillet. Wash the potatoes and carrot with a brush under running water, peel them, and rinse them again. Peel the onion and rinse it.
Step 2
Cover the chicken with cold water, bring it to a boil, and cook for 30 minutes. As it comes to a boil, foam will form and should be skimmed off. Then remove the chicken from the pot, separate the meat from the bones if needed, cut it into pieces if necessary, and return it to the strained broth. Bring everything to a boil again.
Step 3
Cut the peeled potatoes into small pieces. Rinse the buckwheat well several times. Then drain off all the water. The potatoes make the soup more filling.
Step 4
Add the chopped potatoes and the buckwheat to the pot with the chicken. Bring it to a boil and let it cook over medium heat for 10-15 minutes. Judge by the doneness of the potatoes. They should be easily pierced with a sharp knife.
Step 5
Meanwhile, grate the carrot on a medium or fine grater. Finely chop the onion.
Step 6
Heat a small frying pan until hot and add a little vegetable oil. Then add the chopped vegetables, the onion and carrot. Fry everything together for 3-4 minutes over medium heat. Do not forget to stir from time to time so the vegetables do not burn. Otherwise, they will spoil the flavor of the whole soup.
Step 7
Add the sautéed vegetables to the pot with the soup. Add a little salt and spices to taste. If you wish, you can also add chopped fresh herbs. Cook for another 2-3 minutes and remove from the heat.
Step 8
Pour the finished buckwheat soup with chicken and potatoes into prepared bowls and serve. Enjoy your meal!
