Braised Turkey Gizzards
Budget-friendly, made from simple ingredients, healthy, and great for dinner! When cooked properly, braised turkey gizzards can become a real delicacy. Step 1
How do you braise turkey gizzards? Prepare the ingredients. The gizzards can be bought either frozen or chilled. If yours are frozen, thaw them in advance by moving them from the freezer to the bottom shelf of the refrigerator. Rinse the gizzards well and remove any yellow membranes if present. Boil them in salted water until done; this will take about 1 hour.

Let the gizzards cool, then cut them into small pieces.
Step 3
Transfer the gizzards to a pot, pour in 1 liter of water (about 4 1/4 cups), add salt, bay leaf, and allspice, then place on the stove and braise over medium heat.
Step 4
Peel the onion, rinse it, and cut it into cubes.
Step 5
Peel the carrot and grate it on a coarse grater.
Step 6
Pour vegetable oil into a frying pan, heat it slightly, and add the onion and carrot. Fry them over low heat until golden. If you like, add your favorite seasonings.
Step 7
Add the flour to the pan, mix it with the vegetables, and fry everything together a little, stirring constantly.
Step 8
Add the onion and carrot to the pot with the gizzards. Braise everything together for about 20 minutes, until the mixture thickens. The dill and green onion can be chopped and braised together with the gizzards, or you can use the greens to decorate the finished dish. I chose the second option.
