Braised Mackerel in a Pan

Very soft and tender - the best budget-friendly dinner for the whole family. Braised mackerel in a pan with vegetables will pleasantly diversify your daily menu. Cooking it is very easy: most of the time, the dish simply simmers under a lid without your intervention.

Preparation
Step 1
You can use fresh or frozen mackerel. If frozen, defrost properly on the lower shelf of the refrigerator.
Step 2
Wash, gut, and cut the mackerel into pieces about 1-1.5 inches thick (3-4 cm). It’s easier to gut slightly frozen fish. If using frozen ungutted fish, let it partially thaw, gut it, and return it to the fridge to continue thawing.
Step 3
Remove seeds and stems from bell peppers and cut into thin strips.
Step 4
Peel and slice onions into half rings.
Step 5
Peel and slice carrots into thin rounds. Small, thin carrots may require just two pieces.
Step 6
Heat vegetable oil in a pan over medium heat. Add onions and sauté for 3-5 minutes until translucent.
Step 7
Add carrots and sauté, stirring, for another 3-5 minutes.
Step 8
Add bell peppers to the pan and simmer for about 5 minutes.
Step 9
Add tomato puree, tomato paste, and sour cream to the vegetables. You can substitute tomato puree with ketchup. Season with fish spices, salt, and pepper. Simmer, stirring, for 5-7 minutes.
Step 10
Place the cut mackerel on the vegetable mixture. Simmer on low heat under a lid for 20-25 minutes. Flip the fish halfway through (10-12 minutes).
Step 11
Transfer cooked fish to a plate, sprinkle with chopped herbs, and serve with any side dish. Enjoy!
