Preparation
Step 1
Prepare the ingredients. If using pork, choose pork belly. Its fat will make the dish juicier and more aromatic. You can also use another type of meat.
Step 2
Cut the pork into small pieces.
Step 3
Heat a Dutch oven thoroughly and add the vegetable oil. Add the pork belly and cook for 10–12 minutes. The meat will release some juices as it cooks.
Step 4
While the meat is cooking, peel the onion and carrot and rinse them. Chop the onion and coarsely grate the carrot.
Step 5
Add the onion and carrot to the browned meat. Stir and continue cooking everything together for another 5–7 minutes.
Step 6
Finely shred the cabbage.
Step 7
Add the cabbage to the meat and mix well. Cover with a lid and braise over low heat for 20–25 minutes.
Step 8
After about 10 minutes, the cabbage will reduce in volume. Add the tomato paste. Season with salt and spices to taste, then add the bay leaf. Ground black pepper works particularly well. Stir and continue cooking.
Step 9
Cook until the cabbage is tender. Divide the finished dish among plates and serve hot.
