Preparation
Step 1
Prepare the ingredients. You can use ready-made ground beef or grind the meat yourself. If grinding it at home, choose boneless beef, preferably a tender cut without tough connective tissue.
Step 2
Pat the beef thoroughly dry with paper towels, then cut it into pieces, trimming away any tough connective tissue as needed.
Step 3
Pass the meat through a meat grinder. For a finer, more tender texture, you can grind it a second time.
Step 4
Peel the onion, cut it into pieces and place it in a food chopper.
Step 5
Finely chop the onion and add it to the ground beef. Do not process it into a puree; it should simply be finely chopped. You can also chop it very finely with a knife. Peel the garlic and press it directly into the bowl.
Step 6
Season with salt and your preferred spices to taste. A mixture of ground peppers works well. Mix all the ingredients thoroughly.
Step 7
Gradually pour in the milk, mixing it into the ground beef. You can use water instead of milk if preferred.
Step 8
Knead the filling thoroughly, then refrigerate for 20–30 minutes so the flavors can combine. The beef filling is ready to use.
Step 9
To make dumplings by hand, cut circles from the prepared dough, place a little filling in the center of each and seal the edges.
Step 10
You can also use a dumpling mold to make a larger batch. Cook the dumplings immediately or freeze them for later.
