Beef and Rice Soup

A hearty and rich first course for a family lunch! Beef and Rice Soup is essential for a complete meal. You can prepare it any day, and the broth can be made in advance and stored in the fridge for several days.

Step 1
Choose beef for the soup with bones or just meat.
Step 2
Rinse the meat under running water. Then cover with cold water and bring to a boil. Cook for 1.5 hours on low heat. Skim off any foam that appears. When the meat is cooked, remove from bones and strain the broth. Return the meat to the broth.
Step 3
Add rinsed rice to the boiling broth and cook for about 15 minutes. Use long-grain, parboiled rice - it holds shape better and is less likely to turn mushy.
Step 4
Meanwhile, prepare the vegetables. Peel the onion and carrot. Dice the onion and bell pepper. Grate the carrot coarsely.
Step 5
Heat a little vegetable oil in a skillet. Add the prepared vegetables and sauté for 3-5 minutes, stirring occasionally.
Step 6
Add chopped tomatoes to the skillet and cook for another 2-3 minutes until soft and juicy.
Step 7
Transfer the sautéed vegetables to the pot and cook together for another 5-10 minutes until the rice is tender.
Step 8
A couple of minutes before finishing, add bay leaf, salt, spices, and paprika. Press in 2 cloves of garlic. Remove the soup from heat and let it sit covered for a few minutes before serving. Enjoy!
