Preparation
Step 1
Prepare the ingredients. You can use ready-made ground meat or grind it yourself. Choose boneless meat; lean beef works well, while pork with a little fat will make the filling juicier.
Step 2
Pat the meat dry and cut it into pieces suitable for grinding.
Step 3
Pass the meat through a meat grinder.
Step 4
Peel the onion and finely chop it using a food chopper or a knife.
Step 5
Place the ground meat in a large bowl, add the chopped onion and press in the garlic.
Step 6
Season with salt and ground black pepper to taste. Mix thoroughly and refrigerate for 15–20 minutes.
Step 7
Add the crushed ice to the chilled filling and mix it in quickly. Cover the bowl with plastic wrap and return it to the refrigerator so the mixture stays cold.
Step 8
The beef and pork filling is ready to use for dumplings.
Step 9
Cut circles from the prepared dough, place a small amount of filling in the center of each and shape the dumplings.
Step 10
You can also make a larger batch using a dumpling mold. Cook the finished dumplings immediately or freeze them for later.
