Easy
About 1 hour.
Preparation
Step 1
You can use either fresh or frozen vegetables. This time, I have frozen cauliflower and broccoli. Remove the turkey thigh or breast from the freezer and let it fully defrost at room temperature.
Step 2
Rinse the turkey thigh well under running water and pat it dry. Remove the skin, separate the meat from the bone, and cut it into medium-sized pieces. The bone can be used later for making broth.
Step 3
Peel the carrots and garlic (if using), then wash and dry them. Wash the bell pepper, pat it dry, cut it in half, and remove the seeds and core.
Step 4
In a small deep bowl, pour 3-5 tablespoons of olive or vegetable oil. Add the garlic cloves to the oil (cut large cloves in half or quarters).
Step 5
Add your favorite dried spices. I used 1 teaspoon each of vegetable seasoning, fragrant black pepper, and thyme.
Step 6
Mix everything well and set it aside.
Step 7
Meanwhile, heat 2-3 tablespoons of oil in a pan. Add the turkey pieces and fry over high heat, stirring occasionally, until golden brown.
Step 8
Cut the carrots into large sticks or circles. In a separate pan, heat the remaining oil and fry the carrots for a few seconds.
Step 9
Add the bell pepper, cut into large pieces. Stir and cook until the pepper and carrots soften.
Step 10
Separate the cauliflower and broccoli into florets. Bring a small pot of water to a boil, add salt, and blanch the florets in boiling water for 2-4 minutes (depending on their size). Drain the vegetables in a colander.
Step 11
Mix the turkey, sautéed vegetables, and blanched cauliflower together. Add salt to taste.
Step 12
Transfer the meat and vegetables to a baking dish of suitable size. Place the garlic cloves on top.
Step 13
Brush the remaining aromatic oil over all the ingredients in the baking dish using a silicone brush. Cover with a lid or aluminum foil. Bake in a preheated oven at 350-400°F (180-200°C) for about 30-40 minutes. Cooking time and temperature may vary depending on your oven, so adjust accordingly.
Step 14
Five minutes before the end of baking, remove the lid and switch to convection mode to roast the turkey and vegetables. The dish is ready! Serve the baked turkey with cauliflower and broccoli, garnished with fresh herbs if desired.
