Baked Syrniki with Rice Flour

Healthy, diet-friendly, no frying, and delicious! These baked PP (proper nutrition) syrniki with rice flour are low-calorie, light, yet juicy and golden. A great alternative for those following a diet or watching their nutrition.

Preparation
Step 1
Use low-fat cottage cheese for a low-calorie result. Choose dry, smooth, non-grainy cottage cheese without plant fats. You can use a whole egg instead of yolks. The sugar amount is approximate - reduce or omit it if desired. Add vanilla or use vanilla sugar.
Step 2
Put the cottage cheese in a bowl. Add the yolks, sugar, a pinch of salt to enhance the taste, and rice flour. Mix everything with a fork until smooth. If your cottage cheese is too grainy, blend the batter. If it’s too wet, add a little more rice flour until the dough thickens.
Step 3
Preheat your oven to 355°F (180°C). Line a baking sheet with parchment paper. If unsure of the paper’s quality, lightly grease it with oil. Form equal-sized syrniki with your hands and place them spaced apart on the sheet. For a neat shape, press a glass over each and twist gently to smooth the edges.
Step 4
Press the tops slightly with a spatula. Bake for 15 minutes on one side. Take the sheet out, flip them, and bake another 7-10 minutes until golden underneath. Remove from the oven and transfer to a plate.
Step 5
Serve your diet syrniki with sour cream and fresh berries or jam. Enjoy!
