Preparation
Step 1
Prepare the ingredients. You can use salmon, trout, chum salmon or pink salmon. Choose ready-cut steaks or fillets, or portion a whole fish yourself.
Step 2
Pat the fish pieces thoroughly dry with paper towels. Lightly grease a suitable baking dish with neutral vegetable oil and arrange the fish in it. Season with salt and your preferred spices, such as ground black pepper, then drizzle with lemon juice.
Step 3
Leave the fish to rest briefly while you prepare the remaining ingredients. Wash the tomatoes and cut them into thin slices or half-slices, depending on the size of the fish pieces.
Step 4
Grate the cheese on a medium grater. Use a firm or semi-firm cheese that melts well.
Step 5
Sprinkle half of the grated cheese over the fish. Arrange the tomato slices on top, keeping them over the individual pieces of fish for easier serving.
Step 6
Sprinkle the remaining cheese over the tomatoes.
Step 7
Bake in an oven preheated to 355°F for 20–25 minutes, depending on the type and thickness of the fish. Avoid overcooking so the fish stays juicy. Remove from the oven and serve.
