Baked Rice with Chicken

Preparation
Step 1
For baking, you can use any chicken parts, either with bones or just chicken fillet. I take a whole chicken and cut it into pieces. Choose parboiled long-grain rice - it cooks slower, so there’s less chance of turning it into porridge. It should come out fluffy.

Rinse the rice several times in cold water, then drain completely. Use any ovenproof baking dish - glass, metal, or ceramic, but it should be deep enough because the rice will expand during baking. Spread the rinsed rice evenly on the bottom of the dish.
Step 3
Mix tomato paste with water and pour it over the rice in the dish.

Cut the chicken into pieces, rinse under cold water, and place it on top of the rice. Press the chicken pieces slightly into the rice.
Step 5
Peel and slice the carrots into rounds, then add them to the chicken and rice. Press garlic through a garlic press directly into the dish. Season with salt and spices to taste. Cover the dish with foil and place it into a preheated oven at 350°F (180°C) for 20 minutes. Then remove the foil, brush the chicken pieces with vegetable oil so they brown nicely, and return to the oven uncovered for another 20-30 minutes. During this time, the chicken will turn golden on the outside.

While baking, the rice will expand and become soft. Remove the dish from the oven, portion onto plates, and serve. Enjoy your meal!
