Baked Pumpkin and Apple Casserole

Bright, hearty, healthy, and delicious - for the whole family! Baked pumpkin and apple casserole is a very tender and aromatic dish, perfect for breakfast or a snack. You can prepare it in the evening and simply reheat it in the morning.

Preparation
Step 1
I used 5% fat cottage cheese. For a smoother texture, you can strain it through a sieve.

Clean the pumpkin from seeds and peel. Cut into pieces. Put in a saucepan and sprinkle with a bit of sugar (from the total amount). Add some water and place over heat. Once boiling, cover with a lid and simmer over low heat for about 10 minutes.
Step 3
Meanwhile, peel and slice the apples.
Step 4
Add the sliced apples to the pumpkin. Mix well. Continue simmering for another 10-15 minutes. During this time, both apples and pumpkin will become soft.
Step 5
Remove the saucepan from heat and mash everything with a fork. Alternatively, you can bake the apples and pumpkin in the oven: spread them in a small baking dish, sprinkle with sugar and add water. Cover with foil and bake at 350°F (180°C) for 30-40 minutes. Then mash with a fork.
Step 6
In a separate bowl, mix cottage cheese with the remaining sugar and the egg.
Step 7
Gradually add rice flour and incorporate it into the mixture.
Step 8
Add the mashed pumpkin and apple mixture.

Mix everything until smooth.

Grease a baking dish with butter and spread the pumpkin mixture evenly. Bake in a preheated oven at 350°F (180°C) for 45-50 minutes.
Step 11
When the casserole starts browning slightly, remove from the oven and let cool to a warm state. Then cut into pieces and serve. Enjoy!
