Baked Pork with Mushrooms

With mushrooms and cheese – festive and incredibly delicious!

Preparation
Step 1
Choose boneless pork. The cut of meat doesn’t matter much for this recipe since it will become tender during cooking. You can use sour cream of any fat content or replace it with mayonnaise.
Step 2
Buy fresh, medium-sized white mushrooms without spots, damage, or any unpleasant odor. They should not feel slimy. Rinse them thoroughly under warm or cold running water to remove any dirt. Cut out any damaged parts if necessary. Pat the mushrooms dry and slice them. Do not chop too finely.
Step 3
Peel and chop the onion. Sauté the mushrooms and onions together for 5-7 minutes. The mushrooms will shrink and release a lot of liquid, which will gradually evaporate. Lightly salt the mushrooms.
Step 4
Rinse the pork and pat it dry with a paper towel. Cut it into portion-sized pieces. Cover with plastic wrap and pound with a meat mallet.
Step 5
Season the meat with salt and spices to taste. I prefer to use a little ground pepper.
Step 6
Use any heat-resistant baking dish. Grease the bottom with vegetable oil and lay out the pounded pork pieces. Place sliced tomatoes on top. Choose juicy but firm tomatoes—soft ones will lose their shape and turn into an unappealing mush during cooking.
Step 7
Next, add a layer of sautéed mushrooms. Place the dish in a preheated oven at 350°F (180°C) and bake for 30-40 minutes. Cooking time may vary depending on your oven.
Step 8
While the pork is baking, grate the cheese.
Step 9
Five minutes before the end of baking, remove the dish from the oven, spread sour cream over the meat, and sprinkle it with cheese. Baked Pork with Mushrooms, Tomatoes, and Cheese is ready! Transfer the meat to a plate and serve hot. Enjoy your meal!
