Step 1
Use pike perch fillet for this recipe. If frozen, thaw it at room temperature beforehand. Pat the fish dry with paper towels to remove excess moisture.

Cut the fish into serving-sized pieces. Heat a frying pan with a little vegetable oil and sear the fish pieces on both sides over high heat. Season with salt and fish spices to taste. Do not cook fully; just sear.

Use any oven-safe baking dish. Place the seared fish into the dish. You don’t need to grease it - the fish already contains oil from frying.
Step 4
Peel and rinse the onion and carrot. Grate the carrot on a large grater and slice the onion. Sauté them lightly over medium heat for 1-2 minutes.

Chop the tomatoes and bell pepper into small pieces.
Step 6
Add the bell pepper and tomatoes to the pan, stir, and cook for another 2-3 minutes. Lightly salt the vegetables.
Step 7
Spread the sautéed vegetables evenly over the fish in the baking dish. Place it in a preheated oven at 180°C (about 355°F) and bake for 30 minutes. Adjust the time to your oven.
Step 8
During baking, some juice will appear in the dish, and the vegetables on top will become slightly golden. Remove from the oven and serve hot. Enjoy your meal!
