Baked Pasta with Vegetables and Cheese

Preparation
Step 1
To make tasty baked pasta with vegetables, prepare all the ingredients from the list. You can use regular tomatoes instead of cherry tomatoes. If the tomatoes are large, cut them into 2 or 4 pieces before cooking. For a brighter color, I used red onion.
Step 2
Peel the onion. Separate the garlic into cloves (no need to peel). Rinse the cherry tomatoes, onion, and garlic cloves under cold running water. Pat everything dry with paper towels. Slice the onion into half-rings or strips. Put the tomatoes, onion, and garlic into a baking dish and spread evenly over the bottom.
Step 3
Wash the bell pepper, cut it in half, remove the seeds and core. Slice it the same way as the onion. Add it to the dish with the other vegetables.
Step 4
Drain the brine from the cheese. Place the piece of cheese in the center of the heatproof dish among the vegetables.
Step 5
Sprinkle with your favorite spices and ground peppers. I used a blend of Provence herbs, dried oregano, allspice, and sweet red ground pepper. Drizzle with olive oil or vegetable oil.
Step 6
Put the dish into a preheated oven and bake for 40 minutes at 180-220°C (356-428°F) on top/bottom heat. Time and temperature may vary depending on your oven. Aim for the cheese to get an appetizing crust and the vegetables to be fully cooked.
Step 7
While the vegetables and cheese are baking, boil the pasta in lightly salted water.
Step 8
Remove the dish from the oven. Using two forks, break up the cheese and mix it with the tomatoes. Don’t stir too vigorously, otherwise the tomatoes will turn to mush and the dish will lose its look.
Step 9
Add the pasta to the cheese and tomatoes.
Step 10
Mix and sprinkle with fresh herbs.
Step 11
Serve hot.
