Preparation
Step 1
Prepare the ingredients. You can use ground pork, chicken, beef or a mixture of meats. Homemade ground meat works well, but ready-made ground meat can also be used.
Step 2
Combine the ground meat with the egg, salt and spices until evenly mixed. Lift and firmly drop the mixture against the bottom of the bowl several times to make it more cohesive so the nests hold their shape during baking.
Step 3
Peel the onion and finely chop it.
Step 4
Rinse the mushrooms briefly, pat them dry and cut them into medium-size pieces.
Step 5
Heat a little vegetable oil in a frying pan and add the onion. Cook for about 1 minute, until translucent. Add the mushrooms, stir and cook for another 5–7 minutes, until their liquid has evaporated and they have reduced in size.
Step 6
Finely chop or coarsely grate the pickles. Combine them with the cooked mushrooms and add the cream cheese. Season with a little salt if needed, keeping in mind that the pickles are already salty. Mix well.
Step 7
Lightly grease a baking dish with vegetable oil. Shape the ground meat into small balls and make a deep indentation in the center of each one to form nests.
Step 8
Fill each meat nest generously with the mushroom mixture. Bake in an oven preheated to 355°F for 30–40 minutes, until the meat is fully cooked and lightly browned.
Step 9
Remove the baked meat nests from the oven, transfer them to plates and serve hot.
