Baked Fish with Cheese

Preparation
Step 1
I’m using mackerel, but you can use any fish fillet - cod, hake, tilapia, or pink salmon. If the fish was frozen, thaw it beforehand. Any cheese will work - hard, semi-hard, or soft (like mozzarella). The main thing is that it’s tasty, natural, and melts well.
Step 2
Clean the fish - cut the belly and remove the insides along with the black membrane (it can taste bitter). Rinse the fish thoroughly inside and out, then pat dry with paper towels. Cut off the head and tail. Slice along the backbone to make fillets: cut down to the spine, then carefully separate the meat from the bones on both sides.
Step 3
Remove the fins and large bones.

Grease a baking dish with olive oil. Place the prepared fillets inside. Sprinkle with salt, pepper, and fish seasoning, then drizzle with lemon juice.
Step 5
Peel the onion and cut it into thick rings. Red onion works beautifully, but regular onion is fine.
Step 6
Slice the olives into rings (2-3 pieces per olive). It’s best to use pitted olives. If they have pits, crush them with a glass bottom, remove the pit, and slice.
Step 7
Place the onion rings and olives on top of the fish.
Step 8
Peel the tomato. To easily remove the skin, make small cross-shaped cuts on top, dip into boiling water for 1-2 minutes, then transfer to cold water - the skin will peel right off.
Step 9
Dice the tomato.
Step 10
Spread the tomato pieces over the fish.
Step 11
Preheat the oven to 180°C (350°F) and bake the fish for 15 minutes.
Step 12
While it bakes, grate the cheese on a coarse grater.
Step 13
After 15 minutes, remove the dish and sprinkle the fish with grated cheese.
Step 14
Return to the oven for another 5-7 minutes, until the cheese melts and turns golden. Remove, cool slightly, and serve.

Garnish with fresh herbs and lemon wedges before serving. Enjoy your meal!
