Baked Fish with Carrots and Onions

A few minutes before removing the dish from the oven, you can sprinkle it with grated cheese (I didn’t, but it’s optional).
Preparation
Step 1
You can use any fish - white or red. I used pink salmon. It’s easier to use fillets, but you can also cut whole fish into fillets yourself.
Step 2
Peel the onion and cut it into quarter rings.
Step 3
Peel the carrot and cut it as you like - into slices, sticks, or grated.
Step 4
Heat a small amount of vegetable oil in a pan. Sauté the vegetables over low heat, stirring, until they are soft.
Step 5
Rinse the fish fillet and pat it dry thoroughly. If you're working with a whole fish, cut it in half along the spine, remove the backbone, fins, and large bones. Salt and pepper both halves and sprinkle with spices (I used a fish seasoning mix - use your preferred blend).
Step 6
Take a suitable baking dish. Line it with parchment paper or lightly grease with oil. Place the fillets inside. Spread a couple of tablespoons of sour cream over the fish. Top with the sautéed vegetables.
Step 7
Spread the remaining sour cream over the vegetables. You can also use mayonnaise instead of sour cream.
Step 8
Place the baking dish in a preheated oven at 350°F (180°C) and bake for 35-40 minutes. The exact time may vary depending on your oven and the type of fish. Do not overbake - the fish may dry out.
Step 9
Remove the fish from the oven and serve hot. Enjoy your meal!
