Baked Cottage Cheese Pie

The cottage cheese pie is low in calories. Ripe, sweet fruits add natural sweetness, allowing you to skip sugar or reduce sweeteners to a minimum. They also enrich the pastry with fiber. The pie contains no wheat flour, making it suitable for people with gluten allergies.

Preparation
Step 1
You can use ready-made oat flour or make it yourself by grinding oat flakes in a coffee grinder. Rice flour also works well. Coconut oil can be replaced with olive oil or any other neutral vegetable oil.

Melt the coconut oil and let it cool.

Beat the eggs with salt until smooth.
Step 4
Add the cooled coconut oil to the beaten eggs and mix.
Step 5
Sift the oat flour, especially if it’s homemade. This helps remove any unground particles. Add the sifted flour in parts, mixing each time. You may need more or less flour depending on egg size, quality, and flour properties.
Step 6
Knead the oat shortcrust dough. It should be soft and smooth. Wrap the dough in plastic wrap and refrigerate for 20-30 minutes.
Step 7
Prepare the filling ingredients. Use soft, moist cottage cheese with 2-5% fat content. Instead of pears, you can also use apples or berries. Choose juicy, sweet fruits. I’m using ripe, very sweet Conference pears. But if you wish, you can add sweetener to the filling. Cornstarch can be replaced with potato starch.

If the cottage cheese is grainy, it’s better to prepare the filling in a blender so it becomes smooth. Place the cottage cheese in the blender, add the eggs and starch.
Step 9
Blend the cottage cheese until you get a smooth, paste-like texture.
Step 10
Wash the pear and dry it. Peel, core, and cut into small cubes.
Step 11
Add the pear to the cottage cheese mixture and stir.
Step 12
Line the bottom of your baking pan with parchment paper. Any oven-safe pan will work. If using a silicone mold, there’s no need to grease it with oil or margarine. However, it’s better to lightly grease metal, ceramic, or glass pans with vegetable oil to prevent sticking. Roll out the dough into a round sheet about 0.5-0.8 cm thick (about ¼ inch). Transfer it to the pan, press it into the bottom, and shape edges along the sides. My pan is 18 cm (about 7 inches) in diameter.

Fill the dough shell with the cottage cheese mixture and smooth the top.
Step 14
Bake the pie in a preheated oven at 180°C (about 350°F) for 30-35 minutes, until cooked through and lightly golden. Adjust baking time and settings depending on your oven.
Step 15
Note that shortcrust dough made with oat flour will differ from regular shortcrust pastry. After baking, it may be slightly dry. I recommend eating the pie the next day. As it absorbs moisture from the cottage cheese filling, it becomes even more delicious. Cut the pie into slices and serve. Enjoy!
