Baked Cottage Cheese Pancakes with Semolina
Wholesome, lighter, perfect for breakfast and for the whole family. Cottage cheese pancakes are always a great idea for everyday meals, relaxed Sunday breakfasts, children’s snacks, or simply a tasty bite. To make them a bit lighter, bake them in the oven and use semolina instead of flour.

Step 1
How do you bake cottage cheese pancakes with semolina in the oven? Prepare the ingredients. Use cottage cheese of any fat content, just keep in mind that this will affect the calorie content of the finished dish. It is better not to use grainy varieties. The tastiest pancakes are made from rich homemade cottage cheese.
Step 2
Add the sugar and egg to the cottage cheese. Mix with a fork until smooth. At this stage, you can also add vanilla, other spices, and a pinch of salt - this will enrich the flavor of the pancakes.
Step 3
Add the semolina and mix thoroughly. Let the mixture stand for about 10 minutes so the semolina can swell and absorb excess moisture.
Step 4
Sprinkle flour onto a board. Divide the dough into equal parts. Coat each part in flour, then shape it into a ball. Flatten each ball into a small round on the board. Coat the rounds in flour on both sides.
Step 5
Take a suitable baking dish. A skillet, a ceramic baking dish, or a regular baking tray will all work. I do not recommend using glass, because we will use the grill setting and it may crack. Line the dish with baking paper. Transfer the cottage cheese pancakes onto the paper.
Step 6
Bake the cottage cheese pancakes in the oven at 180°C (350°F) under the top grill setting. When one side turns golden, take the dish out and turn the pancakes over to the other side. Bake for about 10 more minutes until they develop a golden crust. Serve hot with sour cream. Enjoy your meal!
