Baked Cottage Cheese Casserole with Egg and Semolina

The easiest, quickest, and healthiest casserole for the whole family! This cottage cheese casserole uses only eggs, sugar, and semolina. It turns out fluffy, tender, and very tasty. Prep takes 5 minutes - the oven does the rest. Great for breakfast or snack time, and kids love it!

Preparation
Step 1
The most important ingredient is cottage cheese - it determines the final taste. Choose high-quality, natural cottage cheese without plant-based additives. Soft cottage cheese is preferable for a more tender texture. Any fat content is fine.
Step 2
Transfer the cottage cheese into a bowl. If it’s very grainy, press it through a sieve or blend with an immersion blender. If it's too dry, you can add a couple of tablespoons of sour cream. Crack the eggs into the bowl. Be sure to wash eggs before use, even if they look clean, as harmful bacteria may be present on the shell. It’s best to use food-safe detergent and a brush.
Step 3
Add sugar, semolina, and vanilla to the bowl. You can adjust the sugar to taste - I’ve listed an average amount.
Step 4
Mix all the ingredients together. I started with a spoon and then used a hand whisk for smoothness. You can also blend the entire mixture at this stage for extra smoothness.
Step 5
Take a baking dish. I used a rectangular one, 9×5.5×2.5 inches (23×14×6 cm). Grease the bottom and sides with a piece of butter. Sprinkle a bit of semolina and shake the pan - the grains will stick to the butter, forming a layer that prevents sticking. This method is known as a "French shirt."
Step 6
Pour the batter into the pan and smooth the top.
Step 7
Bake the casserole in a preheated oven at 350°F (180°C) for 40-50 minutes. Exact time depends on your oven and pan size. Mine baked for 50 minutes. Look for a golden-brown color.
Step 8
Once baked, remove the casserole from the oven, let it cool, and serve. It's great with sour cream, jam, or condensed milk. Enjoy!
