How to make Baked Chicken with Tomatoes? Prepare the necessary ingredients. Any chicken parts can be used: drumsticks, thighs, or fillet. You can also take a whole chicken and cut it into pieces. Tomatoes can be cherry or regular large ones, just slice them. Peel and rinse the potatoes.

I will use chicken thighs, which are large, so I cut each in half. Chicken pieces can be any size. Sprinkle the chicken with salt and spices, rub them in, and let it rest briefly.

Peel and cut potatoes and bell peppers into large chunks.

Choose any ovenproof dish, and grease the bottom and sides with olive oil. Place prepared chicken pieces in the dish and arrange potatoes in the gaps. Lightly salt. Brush the chicken and potatoes with olive oil to prevent drying during baking.
Step 5
Arrange sliced bell peppers and whole cherry tomatoes on top. Cover the dish with foil and bake in a preheated oven at 356°F (180°C) for 40 minutes. Remove foil and leave in oven another 15 minutes to brown. Baking time may vary depending on your oven.
Step 6
Remove the dish from the oven, plate the portions, and serve hot. Enjoy your meal!
