How do you bake chicken with potatoes and vegetables in the oven? Prepare the necessary ingredients. Any parts of the chicken will work for this dish, and you can also use a whole chicken cut into pieces. I decided to cook chicken thighs. Wash and peel the vegetables in advance.

Cut the peeled onion in half and slice it into half-rings. Prepare the baking dish. Grease it lightly with vegetable oil and spread the sliced onion all over the bottom.

In a separate bowl, combine the vegetable oil, salt, and spices. Choose the spices according to your taste.

Coat the chicken pieces well on all sides with the oil mixture and place them into the baking dish.

Cut the peeled potatoes and the bell pepper into large pieces and add them to the bowl with the oil mixture left after the chicken. Mix well so the vegetables are coated with a thin layer of oil.

Arrange the vegetables between the chicken pieces throughout the baking dish.

Next, slice the tomatoes and spread them evenly over the top. Place the dish into an oven preheated to 200°C (400°F) for 1 hour. Because all the ingredients are coated with a thin layer of oil, they will not dry out and will cook through well inside.

To check whether the meat is done, simply pierce the chicken with a knife. Properly cooked chicken will release clear juice. Remove the finished dish from the oven, divide it among plates, and serve. Enjoy your meal!
