Preparation
Step 1
You can use chicken parts instead of a whole chicken for this recipe. Adjust or replace the spices to your taste.
Step 2
In a small bowl, mix soy sauce, lemon juice, and vegetable oil thoroughly until smooth. Remember that soy sauce is quite salty, so reduce the amount of added salt accordingly to avoid over-salting.
Step 3
Wash and pat dry the chicken. Place it in a bowl. Rub it inside and out with the spices. Then coat the chicken with the soy sauce, lemon juice, and oil mixture. Let it marinate at room temperature for 1 hour. If marinating longer, refrigerate it. About 30 minutes before cooking, preheat the oven to 375°F (190°C).
Step 4
Wash, dry, and slice the pears. Choose aromatic, juicy, and firm pears. Soft pears may fall apart during pan-frying, and we want them to keep their shape even after baking.
Step 5
Heat a dry skillet over high heat. A grill pan works well. Place the pear slices in the pan and fry for 3-5 minutes until grill marks appear. Flip and grill the other side until charred spots appear. A nonstick pan is preferable.
Step 6
Place a few grilled pear slices inside the chicken’s cavity. Tie the legs together with kitchen twine. Cover the tips of the wings with foil. Transfer the chicken to a baking dish. Arrange the remaining pear slices around it. Bake the chicken in the preheated oven at 375°F (190°C) for about 1 hour, occasionally basting with the leftover marinade.
Step 7
Transfer the roasted chicken to a serving plate along with the pears and garnish with fresh herbs. Enjoy your meal!
