Baked Chebureki with Minced Meat

Light, healthy, and diet-friendly for the whole family! Baked chebureki with minced meat are a version of the beloved dish for those who cannot eat fried ones. Baking makes them less fatty and lower in calories. They suit both adults and children.

Preparation
Step 1
Start by preparing the dough. Sift the flour first - this removes impurities and aerates the flour, making the dough more airy.
Step 2
How to make the dough? Heat water to 140°F (60°C) - it should be noticeably warm. Pour into a deep bowl. Beat the egg with a fork in a small cup. Add the egg to the water. Add salt. Mix.
Step 3
Add baking powder to the flour. Mix.
Step 4
Gradually add flour to the water and egg mixture, mixing with a fork after each addition. At first, knead with a fork, and when it becomes thick, knead by hand.
Step 5
Be ready that you may need more or less flour than stated. Focus on dough consistency - it should be uniform, stop sticking to hands, yet remain soft. Cover the dough with plastic wrap and let rest for 10 minutes. This allows the flour to fully absorb the liquid and develop gluten, making the dough easier to work with.
Step 6
While the dough rests, prepare the filling. Prepare the ingredients. Minced meat for chebureki works with any meat; I used veal. You can use store-bought or make it yourself. You may add more onion according to taste.
Step 7
Peel and finely chop the onion - I grated it. Add onion to the minced meat, add salt and spices to taste. I used black ground pepper. Add a little cold water - this makes the filling juicier. Knead well. The filling should be somewhat loose. Filling is ready.
Step 8
Roll the rested dough into a log on a work surface. Cut into equal parts. (I divided the dough in half, then each half into 4 parts - got 8 chebureki.) Roll each piece into a thin round cake.
Step 9
Place the filling on one half of the dough piece, spreading it in a thin layer. Leave a 1 cm margin at the edge.
Step 10
Cover the filling with the second half of the dough. Pinch the edge with a fork. Repeat for all dough pieces.
Step 11
Place them on a baking sheet lined with parchment paper. I fit 3 chebureki, baked the rest later. Beat an egg with a fork and brush the chebureki on top. Optionally sprinkle with sesame seeds - I added them to the rest.
Step 12
Bake in a preheated oven at 350°F (180°C) for 15-20 minutes until golden.
Step 13
Remove from oven and serve immediately. Enjoy your meal!
