Zucchini with Ground Chicken in the Oven

An ideal family dish for holidays or everyday meals! Zucchini with chicken in the oven is very easy to prepare and requires minimal effort. It turns out to be a hearty main dish and a light vegetable side in one. Chicken meat goes perfectly with juicy zucchini.

Preparation
Step 1
You can use any ground meat - not just chicken, but also turkey or mixed meats. Use store-bought or homemade ground chicken from fillet. Choose zucchinis with small seeds, not old or overripe. You can substitute zucchini with courgettes. Preheat the oven to 320°F (160°C).
Step 2
Wash and slice the tomatoes into rounds. Choose firm, juicy tomatoes - soft ones lose their shape during cutting and baking.
Step 3
Wash and dry zucchinis. Cut them in half lengthwise to form long “boats.” Carefully scoop out the flesh with a spoon, leaving about ½ inch (1 cm) thick walls. If you prefer softer zucchini, pre-cook them in the microwave or blanch in boiling water for 2-3 minutes.
Step 4
Dice the scooped-out zucchini flesh into small cubes.

Peel and dice the carrot into small cubes.

Finely chop the garlic.
Step 7
Heat vegetable oil in a skillet over medium heat. Add the carrot, zucchini flesh, and garlic. Sauté for 5-7 minutes, stirring occasionally, until excess moisture evaporates. Let the vegetables cool.
Step 8
In a bowl, combine the ground chicken, sautéed vegetables, egg, and semolina. Season with spices and mix thoroughly.
Step 9
Lightly salt the zucchini boats and fill them with the chicken mixture.
Step 10
Line a baking dish with parchment paper and grease it with oil. Place tomato slices on the bottom. Arrange the stuffed zucchini boats on top. Bake in the preheated oven at 320°F (160°C) for 30-35 minutes until done.
Step 11
Transfer the baked zucchini boats to a plate along with the roasted tomatoes. Garnish with fresh herbs and serve hot. Enjoy!
