Zucchini Sauté

Bright, simple, inexpensive, and juicy - perfect for everyday meals! Zucchini Sauté can be served for dinner as a side dish to meat or as a main course. It’s easy to prepare, turns out filling and delicious, and tastes great both hot and cold. The recipe can be customized with your favorite vegetables.

Preparation
Step 1
Wash the vegetables, pat them dry with paper towels, and peel them.
Step 2
I like the carrots to be noticeable in the dish, so I cut them into small cubes. You can also slice them into rounds, half-rounds, or grate them coarsely.
Step 3
Peel the onion, rinse it under cold water, and cut into small cubes.
Step 4
If using young zucchini, you don’t need to peel them. Slice them into rounds, then cut each into halves or medium cubes. For mature zucchini, remove the tough skin and seeds before chopping.
Step 5
Use colorful bell peppers to make the dish more vibrant. Wash them, cut in half, remove the seeds, and slice into medium strips.
Step 6
Scald the tomatoes with boiling water and peel them. Dice them into small cubes or puree them using a blender or coarse grater.
Step 7
Wash and pat dry the dill, then finely chop it.
Step 8
Pour refined vegetable oil (I used olive, but sunflower works too) into a skillet. When hot, add the chopped onion (you can also add green onions if you like) and sauté until translucent, stirring occasionally to avoid burning.
Step 9
Add the chopped carrots and fry over low heat until soft and golden, stirring occasionally.
Step 10
Add the zucchini to the pan and stir. Fry for about 10 minutes, until tender. Season with salt and pepper to taste.
Step 11
Add the bell peppers, stir, and continue cooking for about 5 more minutes, until the peppers soften.
Step 12
Add the chopped tomatoes and stir. The tomatoes will release juice, allowing the dish to simmer instead of fry. If there isn’t enough liquid, add about 1 tablespoon of water. Simmer on low heat until the excess liquid evaporates.
Step 13
Finely chop or crush the garlic, add it to the pan along with the dill. Mix well and simmer for 2 minutes, then remove from heat.
Step 14
The zucchini sauté is ready! Serve it warm or cold, as a side dish or a main vegetarian meal. Enjoy your meal!
