Zucchini Rolls with Cheese and Garlic

Incredibly tasty, with a tender and aromatic filling! Zucchini Rolls with Cheese and Garlic are a perfect appetizer for a festive table. Flour and egg give them a golden color and keep the zucchini firm. Tomato adds juiciness, and garlic gives a spicy touch!

Preparation
Step 1
Choose young zucchinis - they have tender skin and no seeds inside. You can also use zucchini squash. Wash vegetables, eggs, and peeled garlic, then pat dry.

Slice zucchinis into thin strips and sprinkle lightly with salt. Leave for 5-10 minutes so they release juice. Pat dry with a paper towel.

Dredge each strip in flour on both sides.
Step 4
Crack eggs into a bowl, whisk until smooth, and season with salt. Dip zucchini strips into the egg mixture on both sides, letting excess drip off.
Step 5
Heat vegetable oil in a skillet. Fry zucchini strips on medium heat until golden on both sides.

Place fried zucchini on paper towels to remove excess oil.

Prepare the filling: grate cheese into a bowl. Add chopped dill, pressed garlic, pepper, salt, and mayonnaise (adjust amount to taste). Mix well.

Lay zucchini strips on a flat surface. Place some cheese filling on one end.

Add a small piece of tomato on top of the filling (slice tomatoes into wedges or strips for easier rolling).

Roll the zucchini into rolls.
