Zucchini Pancakes with Garlic and Herbs

How to make zucchini pancakes with garlic and herbs? First, prepare all ingredients and spices for homemade skillet pancakes.
Step 2
Use a coarse grater and a large bowl. Grate 700 g of seasonal zucchini into the bowl. Add 2 eggs, salt, and black pepper to taste.
Step 3
Add 300 g of sifted all-purpose wheat flour into the zucchini and eggs mixture.
Step 4
Add 2 garlic cloves pressed through a garlic press and finely chopped dill to the mixture.
Step 5
Mix all ingredients well until smooth zucchini batter without lumps is obtained.

Pour 150 ml of room-temperature milk into the zucchini batter, adjusting the amount depending on the zucchini’s juiciness, and mix again.

Let the batter rest for 15-20 minutes.

Before frying, add 2 tbsp of vegetable oil to the batter and mix well.

Heat a small skillet on the stove. Pour a ladle of batter into the skillet and spread evenly.

Fry the zucchini pancakes on one side for 4-5 minutes until the top is dry but not wet.

Flip and fry the other side for another 4-5 minutes until fully cooked.

Place the pancakes on plates, optionally spread with softened butter, and serve.
